I just love Wyman’s Fresh Frozen Fruit.

There are so many different things you can make with Wyman’s Fresh Frozen Fruit. From a Yogurt Berry Shake, to Blueberry Pancakes and Blueberry Muffins and now a Berry Compote to go with this delicious homemade french toast.
 
At Wyman’s Fresh Fruit harvest season for the beautifully pigmented wild blueberry is about to commence, meaning the small window to enjoy the colorful, fresh bounty of the season is just beginning. During this short harvest, Wyman’s of Maine, a family-owned grower, and distributor of wild blueberries, quick-freezes 11,000 acres of their wild blueberries within 24 hours of gathering, locking in the fruit’s fresh flavor and character. Individually Quick Frozen (IQF) at peak ripeness, Wyman’s wild blueberries are frozen separately to keep the fruit closest to its natural freshness. With nationwide distribution, Wyman’s makes it incredibly convenient to secure these delicious wild blueberries outside of Maine.
 
Small, tart and deliciously juicy, wild blueberries are jam packed with antioxidant compounds found within their deep-blue pigments. Unlike the cultivated blueberry, wild blueberries are only grown commercially in Maine and eastern Canada, they can’t be planted, and are hand-harvested in fields. They’re only in season for just over two months, and can’t be shipped fresh because of their delicate, thin skin.
 
French Toast Bread
 
I had planned to get blueberries for this recipe but our Walmart was out of Blueberries, so I opted for Wyman’s Mixed Berries.  They do have blueberries in them, so that is a plus.
 
The bread above is the kind I used as it is the only bread in our area that has the thickness I want for French Toast.

French Toast with Berry Compote Using Wyman’s Frozen Berries

Serves: 9 slices
Ingredients
  • 1/4 cup all-purpose flour
  • 1 cup milk
  • 1/2 tablespoon plus 3/4 tsp sugar
  • 3 eggs
  • 9 slices of French Toast Bread, Each 1 inch thick
  • 1/2 tablespoon margarine or butter.
Instructions
  1. Beat flour, milk, sugar, salt and eggs with hand beater until smooth. (I use a large pie plate).
  2. Soak bread in egg mixture until saturated.
  3. Heat margarine in a skillet or a griddle until melted
  4. Cook bread until golden brown, about 12 minutes on each side.
  5. I set our griddle to 300-350 degrees.
  6. May be doubled to serve more people.
 

 

Berry Compote Using Wyman’s Frozen Berries

Ingredients
  • 3 cups of berries or if using Wyman’s Mixed Berry I used the whole bag
  • 1/4 cup granulated sugar
  • 2 tablespoons of cornstarch IF needed
  • Can of Whipped Topping Spray (optional)
Instructions
  1.   2. You can always turn the heat down as I know this depends on the heat of your stove top.
  3. Stir until sugar and berries have mixed. You will notice that you start to get a syrupy consistency.
  4. Mine was a bit thin due to the berries being frozen so I added one of the tablespoons of cornstarch .
  5. Then I ended up adding the second one and the consistency was just right.
  6. I put 20 mins cook time but this will depend on the heat of your stovetop you can adjust depending on that.
  7. Keep warm to put on your French Toast and top with Whipped Cream if you choose. Check out some cream chargers and cream whipper.
 

French Toast Bread on the Griddle

This is what my thick toast bread looked like, I did get a bit impatient and flipped them before they were ready so I just let them stay on the other side the 12 minutes and then flipped them over again.
